"In Germany, classic, pleasantly spiced Lebkuchen, or gingerbread biscuit dough, is baked atop a very thin wafer cookie (or, as they're known in Germany, "oblaten"), and according to tradition, these cookies must have a minimum of 12.5% nuts. The Lebkuchen we offer during the holidays more than meets these standards: the dough boasts candied orange peel and an impressive number of spices (aniseed, ginger, coriander, cloves, pimento, mace, cardamom, and cinnamon), not to mention a whopping 25% of the recipe is comprised of almonds, hazelnuts, and walnuts! Because two Lebkuchen are better than one, we offer a Chocolate Covered option as well as a Sugar Iced version for the minimalist Lebkuchen appreciators out there."
