"Ever heard of a Baby Iceberg? Well, it’s a thing. Only you won’t find it in the Arctic—you’ll find it at your neighborhood Trader Joe’s. Full disclosure: we’re not talking about a mini-sized, partially submerged block of ice. We’re talking about Baby Iceberg Lettuce, a.k.a. Trader Joe’s Ice Cube Lettuce, a.k.a. the cutest little Lettuce heads you ever did see! They’re cultivated for us in California and Arizona, using a unique seed variety bred to produce purposely petite Iceberg Lettuce. Like chips off the ol’ ice block—or Cubes off the ol’ ’berg, as it were—these shrunken heads possess the same firm crunchiness and mild (although slightly sweeter) flavor as their big-headed cousins. Their wee size isn’t just for show, though—it also helps reduce waste. (Have you ever had to toss the wilted remains of an extra-large lettuce head, simply because you couldn’t eat it all fast enough? Every bit counts, Baby!) Cut each little Lettuce head in half to make classic-yet-compact wedge salads, or to create snack-sized cups you can fill with TJ’s tuna.
