For this simple, sophisticated confection, our Italian supplier uses Avola almonds, a variety grown exclusively in Sicily, known for its distinctively flat, elongated shape and exceptional, marzipan- like flavor. (There is no almond extract added—though it might taste like there is!) On its own, the Avola almond’s delicate yet nutty profile offers hints of natural sweetness; here, we’ve taken things a step further by enrobing these Avola Almonds in a thin, white, vanilla-flavored candy coating that provides just the right amount of additional sweetness and crunch. At first glance, you might mistake our Italian Confetti Almonds for classic Jordan almonds—the kind often seen at weddings, baby showers, holiday celebrations, et al. (hence the Confetti association). But don’t be fooled, because their flavor and construction are notably different. In addition to the Almonds themselves being a totally different variety than you’d find in Jordan almonds, we’ve purposely kept the coating light; with no heavy sugar shells to overpower the Almonds, their full, complex flavor can really come through.
