"Originally invented in the Joseon Dynasty as a royal dish, reserved for official banquets and state dinners, japchae is still associated with celebrations in modern-day Korea, and is often served at birthdays, weddings, and other formal festivities. Way back in the 17th century, it was primarily a veggie-based stir fry (“japchae” itself simply translates to “mixed vegetables”). It wasn’t until the 1900s that sweet potato-based glass noodles, a product of culinary cross-pollination from China, made their way into the dish, to make Japchae what we know today.
