Made for us by an expert supplier in Italy, who uses a classic die to ensure a grippy and toothsome exterior texture, these splendid little spirals are a bit like ridged elbow macaroni, extended to just the right length for maximum sauce retention.

So named for the Italian word for “corkscrew,” Cavatappi makes a consummate complement to a marinara or alfredo, makes a marvelous base for a baked mac and cheese, and produces a primo pasta salad for picnics and potlucks. And since its shape holds onto sauce from three different angles (its spiraling structure, its ridged exterior, and its hollow interior), it’s acutely capable of carrying those flavors to the palate, while also delivering a delectable al dente texture."
