The "OG" (Old Goat) Aged Goat Cheese

"Trader Joe’s The “OG” (Old Goat) Aged Goat Cheese is not made from milk that comes from elderly goats. The name’s nod to maturity actually refers to the fact that it’s Aged for at least ten months. Over this extended period of time, The Old Goat rests on untreated wooden shelves. The porous quality of the wood helps regulate moisture within the Cheese while fostering the development of beneficial microflora, resulting in a more complex flavor profile than that of its fresh goat cheese brethren.
However, it’s not just the aging that’s responsible for our April Spotlight Cheese’s champion character. You’ll also delight in its firm “paste,” in contrast to the softer, often spreadable forms of chèvre that one more commonly associates with goat’s milk cheese. (Our Chevre with Honey comes to mind.) While this “hard” texture is less common, the overall flavor of The “OG” should be more of what you’re expecting. Its burst of piquant flavor is delicious sliced thin and served on TJ’s crackers; grated over a plate of steaming pasta; or simply cubed and enjoyed one bite after another!
